Cultivated according to EU organic farming standards following some biodynamic principles
Location: Where the coastal hinterland of Santanyí joins the Mallorcan Serra de Llevant hills (altitude 61-72 m).
Land orientation: South to southeast
Soil: Call Vermell formation
Vines: Grafted onto American rootstock (R110)
Average age of vines: 8 years
Annual yield: 1.9 kg/vine
Annual production: 2,200 bottles, packed in boxes of 12 units
Grape varieties: Cabernet Sauvignon 33%, Merlot 33% and Syrah 33%
Harvest: Manually, September 22nd, 2014
Vinification: Controlled temperature of 23-25º C during the fermentation, followed by a maceration process of 21 days.
Fermentation: In stainless steel tanks.
Ageing: 4 months in stainless steel tanks, 10 months in French oak barrels, 6 months in the bottle.
Alcohol content: 14.5% Vol.
Acidity: 3.3 g/l
Residual sugar: 0.41 g/l
Vintage: 2014
Bottle: 750 ml
Date of bottling: December 2015
Colour: Tones of an intense red, with almost violet shades.
Nose: Aromas of ripe fruit, with a hint of liquorice and pastry.
Palate: Pleasant, with a well-balanced harmony of alcohol, acidity and tannins, with a supple finish.
This wine will age well over 5 to 8 years.
Best served at 15-18º
