Cultivated according to EU organic farming standards following some biodynamic principles

Location: Where the coastal hinterland of Santanyí joins the Mallorcan Sierra de Llevante hills (altitude 61 - 72 m)

Land orientation: South to southeast

Soil: Call Vermell Formation

Vines: Grafted onto American rootstock (R110)

Average age of vines: 8 years

Annual yield: 1.8 kg/plant

Annual production: 6,000 bottles, packed in boxes of 12 units

Grape varieties: Merlot 33%, Syrah 33% and Cabernet Sauvignon 33%

Harvested by hand, August 8th, 2013

Vinification: Controlled temperature of 15 - 18º C during the fermentation process, 20 days of maceration

Fermentation: In stainless steel tanks

Aging: 6 months in tanks plus 3 months in bottles.

Alcohol content: 13% Vol.

Acidity: 4.1 g/l

Residual sugar: 0.38 g/l

Vintage: 2013

Bottle: 750 ml

Bottling date: March 2014

Colour: The shade of a pale rose with delicate hues of strawberries, embodying the Mediterranean character.

Nose: Intense, with aromas of fresh and sour fruit, with hints of peach and apricot.

Palate: Smooth in the mouth, with a fresh fruitiness, a nice flair of acidity and a good touch of sweetness.

Best served at 6 - 8º C
